Creamy Palak Soup

To begin with, I would like to highlight the health benefits of palak or spinach leaves. Research has proved that dark green palak leaves are rich in chlorophyll. it is very important to improve the eye sight, cataracts and macular degeneration. 

Also, dark green spinach leaves are rich in iron, low in calories and excellent source of vitamins. In conclusion, I would not hesitate to call spinach leaves as nutrient dense food.

We will make Palak or Spinach Soup today, basically a thick liquid food prepared from blending spinach leaves with onions.

INGREDIENTS

  • 2 tbsp unsalted butter
  • 2 tej patta / bay leaf
  • 0.5 onion (finely chopped)
  • 2 clove garlic (finely chopped)
  • 2 bunch palak / spinach leaves
  • 0.5 cup water (to blend)
  • 1 cup milk
  • salt to taste
  • 1 tsp pepper (crushed)
  • 1 tsp sugar
  • 1 small cup oats
  • 2 tsp fresh cream

INSTRUCTIONS

In a large kadai, add butter and tej leaf along with ginger and garlic. Saute till it turns aromatic.

Furthermore, add onions and saute till it turns golden brown.

Add palak leaves. Make sure to cut the stem and clean before you use.


Saute on medium flame for a minute till they shrink in size.
Allow to cool completely and remove bay leaf.


Transfer the mixture to blender and blend to smooth puree adding water as required. 
Now further transfer the blended puree to the same kadai and add half a cup of milk.


Add salt and give a good mix and get the puree to a boil.


Add crushed black pepper and sugar.



Add oats to the soup accordingly. stir again and check the consistency. the more oats you add the more thick your soup will be.


Then pour the soup in serving bowl and top with fresh cream.
Finally, enjoy the piping hot palak soup.
